Chilly fall evenings are a fine time for a spicy bowl of chili. And if it can be thrown together with minimal fuss and time, all the better.

Because while I love a slowly simmered soup or chili, my life rarely has room for such luxuries. Usually it's more a matter of what I can get on and off the stove as quickly as possible.

In the case of chili, speed usually comes at the expense of flavor. But I've learned to compensate for that with a few simple techniques that boost flavor without slowing down the dinnertime rush hour.

start by briefly heating my spices in oil. This helps bring out their most intense flavors, mimicking the depth of flavor you'd expect from a more slowly cooked dish.

I love making chili and this recipe sounded pretty good because of the apples. That's something I haven't ever added to one of my pots before.

Chili is one of my favorites. When we were in Arizona we ate at a place that had raw spinach on the buffet. I would put some spinach, raw shredded carrots, and raw diced tomatoes on a plate, then, I covered it with chili.

One of the chain restaurants here in Pittsburgh has chili, and I am able to to the same thing here.

Chili is a good idea rottlady.

HI Rottlady!

I made the chili! I had to change it just a little. I used turkey (I don't eat beef) and I could not find smoked paprika anywhere! So I used regular paprika. I am single and have no children so it was a lot of chili but I had planned to freeze it? Well one friends taste turned into another and next thing I know friends and family were eating all my chili and writing out the recipe! :-) It was a really nice spontaneous response. So I thank you for a great meal and an opportunity to look good in the kitchen! (I also use the same toppings you have in the pic....oh so very good!) ;-)

That's what I end up doing, I eat it for a few days, then freeze the rest in individual bowls to thaw as I want. Works great for me!

It's always nice to be seen as a cooking star isn't it! Thanks for sharing!
